Fudge Mountain Cake

Ingredients

Fudge Mountain Cake

1 cup butter

1 1/2 cup semi-sweet chocolate chips

6 eggs

1 cup  sugar

1/4 cup strong tea( I' ve also used brandy)

1 teable spoon vanilla

3/4 cup cocoa powder(Iused a mix of Dutch process and regular)

1 table spoon salt

Ganache

2 cup milk chocolate chips


1/4 to 3/4 cup heavy cream

Method

Preheat the oven to 350 F. Grease three to five 8" cake pans (depending o how many layers you want) and line with parchment paper.


Melt the butter and chocolate chips in the microwave or on the stove top.
Meanwhile beat together the eggs and sugar for about five minutes at high speed until pale and more than doubled in volume. Add the coffee and vanilla to the eggs and beat until combined. Divide in to preheated cake pans and bake for about 15-25 minutes or until tooth pick comes out with some crumbs attached but no longer wet.


For the Ganache, melt together the chocolate and about 1/4 cup of cream in the microwave. you will want to turn the micro wave power down to about 30% and stir often or use for the top.Place the bowl of melted chocolate in a while until fluffy,adding more cream if it get too thick. Use this for the filling of the layers and then use what you have set aside for the top. Top with chocolate curls. This is a very good served with whipped cream

Chocolate Banana Snack Cake

Ingredients

2 Cup almond flour
1/2 Cup tapioca flour
2 Table spoon potato flour
1/2 Cup cocoa powder
1 Heaping teaspoon baking soda
1/2 Teaspoon kosher or sea salt
3 Large eggs
2 Large very ripe bananas
3/4 Cup coconut sugar
4 Table spoon melted ghee or clarified butter
1 Table spoon pure vanilla extract

 Instructions

Preheat oven to 350 F; generously grease an 8"x 8" baking pan.Whisk together the flours, cocoa powder,baking soda and salt in to a large bowl,set aside. In the bowl of a stand mixer(or another large mixing bowl if using a hand mixer),mix the eggs bananas,sugar,ghee,and vanilla on medium speed until well blended. Mix in the almond flour mixture in three additions on low speed, mixing well and scraping down the side after each addition. 
Spread the better (it will be thick)in to the prepared baking pan and bake for 30 to 35 minutes,or until a knife inserted in the center comes out clean.
 Place on a wire rack and allow to cool. Cut in to 16 squires for serving.
